When I was in Tokyo—one of the world’s great food cities—I went to these amazing food halls where they have 30 or 40 soy sauces. None were better than this one. It’s as different from supermarket stuff as great wine is from Thunderbird. The color is black as night. The flavors are complex and layered, ranging from nutty to floral. It’s rich on the palate, with weight and power and aroma like a fine wine. Like all transcendent foods, it’ll make you want to eat it right out of the bottle.
