This is an amazing bubbly wine, truly unique and rare, and if it were French and called Champagne it would be well over $100 per bottle. Made from organic grapes in the center of Penedes, the most classic region for Cava in Spain, this bubbly is my own blend and label. So it’s the way I like bubbly. It’s a blanc de blancs, so 100% Chardonnay with 60 months, that’s FIVE yes 5 years on lees. Crispy green apple notes balance the delicious buttered brioche toasty classic blanc de blancs quality.
